Heat oil in wok and add garlic. Stir fry for 1/2 minute then
add chicken and cook for a few more minutes. Add onions and
chiili. Continue cooking for a few minutes. Add stock and stir
to combine. Add remainder of ingredients (apart from cashew
nuts and spring onions) and cook for a few more minutes. Add
cashew nuts and spring onions and stir-fry briefly. Serve with
rice.
