Put the lentils and water in a deep pan, boil
then lower the heat and simmer for 20 minutes. Meanwhile, heat
oil in a seperate pan and fry the onions till dark brown. Add
fried onions and oil to the lentils, stir, add spices, salt and
pepper. Simmer for 5 minutes then add the burghul, cover and simmer
for 40 minutes. Take off the heat and leave to stand for 15 minutes.
Serve hot or cold with salad or yogurt.
