Sardine

Serves 4 - 5
- 1kg fresh sardines or whitebait
- 3 onions sliced
- 6 medium tomatoes chopped
- 3 tbs olive oil
- 4 tbs lemon juice
- 4 tbs white vinegar
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/4 tsp chilli
- Salt & pepper

** Important **
When using fresh vegetables and herbs, make sure they are
washed thoroughly and drained.
|

|
Place fish in oven-tray and after mixing the remainder
of the ingredients together, add to the fish. Bake in hot oven
for 30 - 40 minutes, or till fish is cooked. Serve hot or cold.
(Tastes even better the next day!)
